Roasted Root Vegetables and Grains
- 4 sweet potatoes (bright orange), peeled and cut into 1/2 in” cubes
- 3 beets, peeled and cut into 1/2″ cubes
- 3-4 tbsp. olive oil
- 1 onion, chopped
- 2 handfuls of beet greens or spinach, chopped
- 1 tsp dried thyme
- 3 cups cooked grains (quinoa, brown rice, barley, etc)
- salt and pepper to taste
Preheat oven to 400 degrees. In two separate bowls, mix potatoes and beets with olive oil and sprinkle with salt and pepper. Place the vegetables on two separate baking sheets (keeps the beets from making the potatoes pink) and cook about 35-40 minutes.
Meanwhile, cook the onion in a large skillet with about 1 tbsp. oil till translucent and a bit browned. Add the chopped greens and thyme and cook till the greens are wilted (a few minutes). Mix in the grains. Add the roasted vegetables and salt and pepper to taste (if needed). Serve! THIS IS ALSO GREAT WITH A FRIED EGG ON EACH SERVING 🙂
